Coconut Clusters: We got our inspiration for this one from Peanut Butter & Pepper but have adapted it a little bit to share with you! You don’t need a specific recipe with measurements for this one – it’s really more of an idea and you can get creative with it and swap out chocolates or add whatever spices you like!
To make them, start by mixing shredded unsweetened coconut with enough coconut oil and coconut milk to form a ball. We like to add a little bit of vanilla extract to the mix too. PUt them in the fridge or freezer to set. In the meantime, melt some chocolate (white, milk or dark). When the clusters are thoroughly chilled, dip them in the chocolate so they’re well covered and put them on a parchment-lined tray and into the fridge to chill. Once the chocolate is hardened you can eat them or (and we like this option best) you can dip them again in a different type of chocolate to make a second layer! Double the chocolate, double the fun, right?!
